Black rice is a fantastic alternative to white rice. It has a chewy, nutty texture and is a great source of anthocyanin, a powerful antioxidant. You’ll be able to buy black rice from most supermarkets or health food stores.
I’ve combined some of my favourite everyday superfoods into one big salad. Baby romaine lettuce leaves form the base of this salad. Romaine lettuce is also known as cos lettuce and is packed with nutrition. It is a source of vitamin K, potassium, vitamin C and vitamin A.
Spinach and kale both offer many nutritional benefits. Kale is rich in vitamin C, vitamin K and calcium, while spinach is high in folate, vitamin A and vitamin K. Both green vegetables are beneficial for heart health, immune function and gut health.
Za’atar is a spice blend used in Middle Eastern cooking. The blend will vary from region to region. Most za’atar blends contain sesame seeds, thyme, marjoram, oregano, salt and sumac. For this recipe I have bought a good-quality store-bought za’atar. Serve with the Tunisian Mashed Carrot Salad.
Ummak huriyya is a traditional Tunisian dish using boiled mashed carrots. I have been inspired by this dish
and added some of my own touches. I have roasted the carrots instead of boiling so the flavour of the carrots is
sweeter and more intense. I’ve also added toasted pine nuts to add some extra crunch and texture.
Sausage rolls are a terrific meal for kids to get involved with and make. If you use the right kind of pastry, they can also be a nutrient-dense meal. In this recipe I’ve used a store-bought wholemeal spelt flour puff pastry. When you’re buying pastry, look for a puff pastry made with butter instead of those made with refined vegetable oils.
Follow these tips to make sure you get the best-tasting brownie: use the right size browning tin — 20cm x 20cm — and don’t overbake your brownie.
This is the perfect mid-week meal. The key to baking quinoa in the oven is to make sure the liquid is hot before you pour it into the baking dish. Feel free to add any combination of vegetables, such as corn or cherry tomatoes.
Speculaas are traditional Belgian biscuits made with a delicious spice blend of cinnamon, nutmeg, ginger, cardamom and cloves. This is a version using more nutrient-dense flours; a mix of brown-rice flour, blanched almond meal and spelt flour. These biscuits are pressed into a decorative wooden mould in the shape of a windmill, boat or person before baking, but any biscuit shape will do.
These easy cheese rolls are the ultimate snack or dinner side – the little hidden pocket of feta in each is a delicious delight!
Fresh and summery, this tomato sopska salad is perfect for all seasons, with a hint of chilli to give every bite a kick!
